Coconut Sugar Banana Cake #BundtBakers


It's a middle of the month which means that it's time to reveal the results of  another #BundtBakers group baking. This month our host Terri Truscello Miller from Love and Confections (thanks Terri) asked us to go into the world of coconut  of all sorts, form and shape. A white theme for a supposedly white month - not in London, though! 

As I am writing these lines, I am very reluctant to tell the story, as my last month's experience with the #BundtBakers and mint theme sounded very similar. But because once again, has a happy ending and I like happy endings and nice surprises, I will admit that things like what am I going to do with coconut, no one likes it, I used it twice for decorative purposes (gives lovely picture contrast) bla, bla.. were going through my mind at first. Then I went into a I'll think of something phase, to soon discover that I've got a long forgotten packet of coconut flower sugar on the back of my "I need this" cupboard (when I decide to clear and clean it once in a blue moon, interesting things tend to emerge from the far back corners).
But this one I remembered buying a few months ago, only because I never heard of it before and was obviously very curious.  Not knowing what to do with it and lacking an inspiration to experiment, luckily led to this moment.

After having a spoon or two of the sugar to learn more about the taste I noticed that the sugar  had a very distinctive butter caramel taste which again, made me think about banoffee pie and possibility to transfer it (not the pie, but the taste) into a bundt pan. I decided to use my banana bread as a basic recipe and in addition of using coconut flower sugar instead of caster sugar, I also replaced the butter with coconut oil.To make it a bit creamier I served the cake with slices of banana coated with chocolate and coconut flour. I must not forget to mention that I used coconut shavings for decoration. Loads of coconut for someone not very keen on it. Who knew?

Coconut Sugar Banana Cake

fills one small 0,5 l bundt cake tin

100 g flour
3 tbsp coconut oil
100 g cream cheese
100 g coconut sugar
1 egg
1 tsp baking powder
pinch of salt
1 banana
optional, but recomended
icing sugar for dusting
2 bananas
50 g melted chocolate 
2 spoons of fine shredded coconut 

Preheat the oven to 170C/350F
Mix the dry ingredients together and beat the coconut oil ( or butter) in a separate bowl. Combine the oil with cream cheese, then add the dry ingredients mixture.Mix until well combined, add the chopped banana at the end, mix to incorporate it and transfer to a greased and lightly floured tin. Bake for 35 to 40 minutes or until golden brown in colour - do the tooth-stick test if you are not sure.
Leave it to coll down for few minutes then invert to a cooling rack.Dust with icing sugar.
In a meanwhile, chop 2 bananas into thick rings, dip each one into a bowl of melted chocolate and immediately lightly roll into shredded coconut.
Use the melted chocolate leftovers to spread around the bottom part of the cake and arrange some coconut shavings onto it.
Serve each slice of the cake with a piece of banana "Lamingtons"
