Hand pies


Made from the leftover cookie dough with cream cheese-blueberry filling.    


100 gr full fat cream cheese
70 gr sugar
2 teaspoons of lemon zest
1 egg
150 gr chilled or frozen blueberries
1 tablespoon of flour
Mix the ingredients.

Preheat the oven to 180 C/ 350 F.
Roll the dough to 3 mm thick and cut into 10 cm x 10 cm squares, put the filling in the middle, brush the edges with a touch of milk and bring the opposite corners together. Use a fork to "stitch them together".

 Make a hole in the middle to let the steam escape and chill for half an hour before putting them into the oven. You can brush them over with double cream or milk, if you wish. I didn't.


Bake for 20 to 25 minutes, until slightly golden and don't forget to rotate baking tray.

Let them cool completely, dust with icing sugar and then serve.

You could make a much neater shape, I just preferred this freehand-made look.
