Chocolate meringues


I don't even like meringues, but  these looked irresistibly gorgeous and I had to make them, just for the sake of photographing and showing them off.

You will need:
75 grams of chopped dark chocolate
3 egg whites
a little bit of cream of tartar
175g sugar

Melt the chocolate and set aside to cool slightly while you whisk up the whites.
Put the egg whites and cream of tartar into a clean bowl and whisk until stiff, add the sugar and continue whisking until stiff and glossy. Drizzle the melted chocolate and stir gently to create a streaky and marble look.

Makes 12 meringues, which you scoop from the bowl and place slightly apart onto the greaseproof paper laid on baking tray . Bake for 2 hours on 120 C. 
Leave them to cool before peeling the paper off. Store in an airtight container for up to 1 week.
